USAPEEC, with sponsorship from USB and with support from USDA, will provide a USAPEEC Seminar in Guatemala, Panama, El Salvador, Honduras, and Nicaragua. This year the seminar will be focused on “Safety And Cold Chain Management In Frozen U.S. Poultry Products” where the following topics will be discussed:

Handling and storage of refrigerated and frozen products (raw and finished)

Evaluation of the quality of raw material

New and improved freezing and thawing technologies

Effect of temperature on meat grinding and impact on poultry safety and quality

The Seminar is aimed at supermarkets, meat processing plants, poultry meat processors industry, importers, retail, food services, and producers.

The speaker for this seminar is Shelly Mckee, with a PhD in Poultry Sciences Expert from Auburn University, Associate Professor Department of Poultry Sciences. Shelly Mckee is currently VP Food Safety and Quality Assurance at Deb-El Food Products, LLC
